Potato salad


I don't know how many of you have eaten such a salad, but I have eaten it many times since I was a child at my mother's house, fasting over the years. It's very easy to make and it doesn't take long so I invite you to try it. Of course, you can also make it for fruit by putting a boiled egg, but also boiled chicken breast or bacon, as you like.

  • 4 potatoes
  • 1 yellow onion
  • 1 carrot
  • 200 gr large pitted olives
  • 1 red or green ardel
  • oil
  • salt

Preparation time: less than 30 minutes

RECIPE PREPARATION Potato salad:

Boil the potatoes and carrots, drain and leave to cool so as not to burn when you hold them in your hand. After they have cooled, peel the squash and cut them into suitable cubes. Cut the onion and julienne, the olives in half and mix everything in a bowl, being careful not to crush the potatoes, sprinkling salt and oil to taste. You can decorate it with parsley leaves and a few slices of tomatoes. Simple, right?
